The dining facility services the entire HMCC complex. There is a permanent
staff of one Food Service Manager and two Food Service Stewards who supervise
approximately 40 - 45 inmate kitchen workers. These inmate workers are trained
by the staff and provided the experience needed to possibly obtain employment
in the food service industry upon release. The diet has been studied and
approved by a registered dietician. Food is purchased through state contracts
within the private industry. The food service staff order food for and supervise
the preparation of approximately 365,000 meals annually. There are 4 available
diets. Though most inmates are on the standard diet, there are also meals
for therapeutic purposes, vegetarians, and religious reasons.
